Note to the mod that deleted my last reply and will inevitably delete this one. Why don’t you delete “Apple is not here” since it’s entirely non-constructive too while you’re at it, thanks.
You don't. Card data is not exportable.

Not having a way to export my transactions from Apple Card to Mint is a gigantic let down. Please fix this Apple.
