Restore 2011 iMac to original Mac OS from the internet
How do I restart the recovery?

A 2011 is too old to be able to use Internet Recovery. That did not work until the late 2011's were introduced and unless you are very lucky and got yours at the end of the model run it simply will not work. You will need a DVD to install Mac OS or if your HD is still in-tact the Recovery Partition.
