This happened just tonight and it is common for iPhone 7's. The sound icon is greyed out and I can not hear sound. I even read a Change.org petition about this exact issue and though Apple is blaming it on a connection problem (hence trying to force me to buy a new phone) but it really happened because of the latest software update.

More than 2500 people are having the same problem with their iPhone 7's since the last software update. The sound icon is greyed out and the sound is disabled. Showing me the Apple warranty or telling me to make an appointment at the Genius bar is not a solution.
Check out the Change.org petition for the iPhone 7. Apple refuses to acknowledge that it is their problem and they are using this opportunity to force customers to upgrade their phones. How do I know that the sound icon button is greyed out? Because when I make a phone call the sound icon button is greyed out.
