Do you need an iCloud plan for each device that you own?... One for iPhone, one for Mac, one for macbook?

No. It is almost always preferable for each person to have one Apple ID and to use that ID on all of their devices. All devices that are logged into iCloud using the same Apple ID will automatically share the same iCloud storage plan.
