If I delete a text message & I have it set up in settings to save messages forever, is it really saved forever & if so, how can I retrieve the text message?

No. That setting is to control how long they are kept before they are automatically deleted. The Forever setting means that they won't be automatically deleted but has nothing to do with you manually deleting them.
