can I view my photos backed up with iTunes, directly on my pc
after backing up photos via iTunes, can I view each picture on my computer?
Can I copy a picture & paste it elsewhere?

No the, any photos backed up from the camera roll are not stored in an accessible format. You should Transfer photos and videos from your iPhone, iPad, or iPod touch - Apple Support in addition to backing up the device.
