if i take my sim card out of my phone and put it in someone else’s, would find my iphone track my phone or the sim card in the other phone?

Find my iPhone tracks the phone. The sim card has no tracking mechanism.
Find My iPhone requires an internet connection, be it Wifi or cellular.
If you take out the sim card and as such sever the cellular connection and the phone has no wifi connection available, it cannot be tracked.
