How do I switch the Organizer of the family? And if I switch to the Organizer of the family will we still have all our content?

You have to disband the family and then set up a new family using the new organizer. If all the family members are the same, you should retain all you content. If you have children under 13, you need to set up the new family and transfer them to the new family before disbanding the old family.
