How do I TALK to someone to cancel a subscription???

First you try to cancel them here: View, change, or cancel your subscriptions - Apple Support because they are going to ask you to try that.

If you do not find your subscription there then you probably subscribed directly through the app/developer and not through iTunes. In that case you would need to contact the app developer.

You can also use this: iTunes Store - Contact Us - Official Apple Support

If all that fails you call AppleCare and ask them to transfer you to iTunes store support.

You can use the contact support link at the top of the page to contact Apple. You can also use the link provided to manage a subscription.
