How do I change a photo assigned to a person

Welcome to Apple Support Communities. I understand you're looking to update a photo for one of your contacts. I'll be happy to help and point you in the right direction.

On your iPad Pro, you can open the Contacts app and select the contact you'd like to update the photo. Once you select the contact of your choice, on the upper right corner you'll want to tap on "Edit." Underneath the existing photo, you'll need to select Edit and follow the prompt to Take Photo, Choose Photo or Edit Photo.
