Except while it is doing the initial encryption, then it is read/encrypting/writing the disk.
Most recent intel CPUs include hardware to aid the encryption/decryption process.
I've used FileVault on a base model 2012 MacBook Air and on a 2016 MacBook Pro. I couldn't notice any difference in performance with it turned on.
