There is no way to predict which apps will or will not continue to run with your current iPhone. At some point all developers will stop supporting older apps that run on previous versions of iOS. If there specific apps that you require, I suggest that you contact the developers to see how long they plan on providing support for.
We can't tell you that, because it depends on the developers if they continue to support app's versions for previous versions of iOS.
None of the iPhone 5 models are capable of running iOS 13.
The apps on your phone will continue to work. Since an iPhone 5 can't update past iOS 10.3.3, any app that requires an iOS version of 11 or later will not work. If you need an app that requires a newer iOS version, you will need to get a newer phone.
if I cannot update IOS13 on my iphone 5, what types of apps will I NOT be able to use?
thanks

I love the iphone 5 size--are any of the new phones not so huge?--
The iPhone 8 is relatively small, compared to all the other newer models and Apple still sells them. You can also potentially find refurbished phones, like the iPhone SE which is exactly the same size as the 5s but with basically the iPhone 6s components.
FWIW, I have an SE because, I too, prefer the smaller size. Apple may revisit this in the near future. At least, that's what I'm hoping for.
Every App that currently support iOS 10.3 or below will continue to work.
You may look into an iPhone SE (4") or iPhone 8 (4.7"). iPhone SE you'll have to buy third-party. But both support iOS 13 and possible future versions.
