Is there a simple option to save only music to a file ( iTunes ) from that music video?

Look in the iTunes Store, or other digital resellers such as Amazon, eMusic, etc.

No. And doing so would be a breach of the terms of use of YouTube. If you like the music and want to listen to it when you want then buy a copy.
