I know how to use it in a store, but it would seem that, at least in the US, there is no way to use Apple Pay in a restaurant that I can see, but I thought there might be some trick to it. I guess not?
None of the restaurants we go to know about Apple Pay. Does it require the type of device that restaurants use in Europe, where the server brings the device to the table? If so, I have never seen a US restaurant use such a device. Or is there some other way to use Apple Pay in a restaurant?
Unless the establishment is set up to accept it, no. You can't force any business to accept a payment option that have no means of processing.
I use Square in my small business for accepting credit payments. Square makes the decisions about what payments you accept because they're the ones who do the actual processing. It can be Apple Pay, Android Pay, VISA, MasterCard, American Express, or Discover. If a customer pulls out anything else, they're out of luck. I can't accept it because Square doesn't.

I use Apple Pay in restaurants that accept Apple Pay; it works the same as in other businesses (stores).
It depends entirely on the business. Doesn't matter if it's a restaurant, Wal•Mart, a local hardware store, or anything else. Either they accept it as a payment type or they don't.
