In the new Mac osX CataIina I cannot find a way to change the columns viewed in Mail. You used to be able to change the field widths and add columns from the View/Columns menu. How can I accomplish this now?
Also, what does the black background TO next to the email title mean?
This is why I NEVER "upgrade" my OS when it is made available by Apple, sometimes waiting a YEAR OR MORE before I'll take that step. Typical of Apple to ignore users and instead operate entirely within their own silo. I am still on High Sierra and thankful for it. Apple has bungled a few things in the past few years, usually because they (apparently) have no understanding of how different people use their OS, nor do they solicit input from users ahead of time.
@LalitaX Agree with your disappointment, but you can upgrade to Office for Mac standalone product. It's cheaper to go thru a 3rd party reseller. I got the Office for Mac Suite for less than $100 as a standalone product.
Using 'Feedback" is an absolute waste of time!
If it wasn't, this flub would have been rectified right from the beginning.
And if it wasn't, Apple would have emerged from under the cone of silence months ago, and stated their intentions concerning this flub.

My guess is that there is an Apple Mail Development Lead who made a monumental error of judgment to remove this critical functionality, and who is now steadfastly refusing to acknowledge his or her mistake. As long as that person remains in that position, no-one at Apple will be willing to say or do anything about it.
WARNING: Don't believe it until you see it!!! DO NOT update to Big Sur, for example, until you have absolute verification that the "reintroduction" is sufficient. Frankly, because of the lack of communication from Apple over the months, I have no confidence that Mail will now be as effective as it was pre-Catalina.
Just switched to Outlook. Awesome! Haven't used it for almost a year since I retired and forgot how good it is. An email client for adults.
Don't know why I haven't done it long time ago, even with High Sierra and before.
Removed Mail from the dock.

I have an older MacBook Pro and would like to upgrade, but it looks like I'll have to wait for 11.1 or beyond.
Some users are reportedly finding that upgrading to macOS Big Sur renders their Macs unworkable. It appears to be specifically the 13-inch MacBook Pro that is affected, and then chiefly the late 2013 and mid 2014 models.
28 November 2020 - just upgraded to 'Big Sur' and there it is! Apple Mail is back on form, with functional, sizeable, movable columns. It has instantly elevated Apple Mail back to its previous state of usefulness and value. Apple Mail is once again a valuable mail program. Thank you Apple for listening and reversing your decision.
My final hope is that Apple will learn from this disaster. We have witnessed one year of not listening to massive numbers of dissatisfied customers, a complete refusal to engage in dialogue and the adopting a stand-off position which intensified frustration and rage. Never admitting that a mistake was made or that there was an intention to correct the error.
So, finally and in summary (1) Thank you Apple for restoring Apple Mail to the great program it was before Catalina, and (2) Please reflect and change on how you received, learn from and implement customer feedback - as without us -- your customers -- you will fail as a company.
Yes, a terrible feature to remove. PLEASE bring it back so that we may customize our mail columns as we need.
Apple - we are waiting for Columns in Mail to be returned - Please don't make us wait too long as other Mail apps exist?
