Can I use my Apple watch without being located?

If you have location sharing on on your paired phone and you use the Apple watch to make a call away from the phone, does that make it automatically locatable?

No. Location is shared from the selected device only. Making a call does not change your location. Unless you are actually sharing the location from the Watch, it will not be seen by anyone whether you make a call or not.
