I heartily recommend that you download the iPad User Guide for iPadOS - available within the Apple Bookstore App. It’s a resource frequently overlooked - containing a lot of very useful and helpful information. All the new functionality is described therein.

No, there’s another way. A long-touch in the message list will reveal another menu - then select the “Flag” option from the list.
