No matter how many times you ask, the answer is still going to be, "You can't".

There is no way to disable the power button from ending a call. That is how the phone works.

it seems with IOS 13 you can't directly do. But, there is a work around,

swipe up to go home and then press the power button, that will lock the screen.

You can't make the device do something that Apple doesn't allow.
