When I try to do this, I'm required to give the serial number of the new phone--which has not been purchased. I'm trying to purchase several at the same time and would like to schedule an appointment to do so. Is this possible?

You don’t need an appointment to make a purchase. Just go to any Apple Store and they will help you purchase a phone.
