How to organize my Apps on the computer for my iPhone.

What is the easiest way to organize apps on my iPhone? I would like to do it on my Mac. (it takes too long to do it on my phone) iTunes used to have an App section in the library but they got rid of that for some dumb reason. Any suggestions?
