I installed the most recent update and when I turned my Apple Watch on, my watch/clock face went from colors to black and white. I powered off my watch and turned it back on, but it didn’t fix the problem. The colors are still on my apps.

Oh, I just fixed it. I hit the Gray color dot in my iPhone and it fixed it.
On your iPhone Watch App Tap on Accessibility and see if Grayscale is On...if so, turn it OFF.
The gray scale is definitely off. I tried turning it on then off to see if it helped. I also powered watch off then on. Still have black and white clock face.
Also, the B and W is like that on my phone.
