How do I update Google Earth on my iMac to 64 bit technology? It says "contact developer". I think that is what I am doing.

macOS Catalina can only support 64 bit applications. It is stating that Google Earth is currently a 32 bit application. You'll have to wait until Google update this application to be compatible with macOS Catalina.
Contacting the developer will only send an email / request to them. As Google is an enormous company, it is more than likely they are aware of this and it may be updated at some point in the future.

I'm running Google Earth Pro V 7.5 and it runs fine in Catalina:
So go to the Google Earth website and download the latest version.
Google has already made a new version available. See https://support.google.com/earth/answer/21955?hl=en You may have to remove the old version of Google Maps. I copied this from another discussion.
