Photoshop CS6e is not entirely 64-bit, and depends upon Apple's ancient Java 6. Microsoft's Office 2011 for Mac is a 32-bit application suite that was discontinued in Oct 2017. Catalina only supports true, compatible, 64-bit applications, and neither Adobe nor Microsoft are going change this fact with retired software. I gave you some options from free to low cost software alternatives.

Adobe's customer service can "look" all they want, there is no remedy in Catalina for CS6 or older Adobe software. It's dead.

Sorry, but I for one am not interested in hearing how "expensive" this software is. Try my history of paying for upgrades starting at Photoshop 3 (actual 3, not CS3), the Design Suite from version 5 up, to the CS5 and CS6 Master Collection, and now the CC suite. In short, if you're using this software in a business, you should have made a thousand times more in revenue by now than it cost to purchase.

Also, cost is irrelevant. No software lives forever. CS6 was only officially supported by Adobe through Mountain Lion. That it was usable even in Mojave was all bonus. Now it's time to move on.

Your only other choice is to revert to an older OS where your old, unsupported software still functions. And even that eventually won't help. When titles get past a certain age, Adobe shuts down the activation servers for those titles. At some point (and it likely won't be long), you won't be able to activate CS6, or get updates for it.

Thank you for the info Adobe customer sevice is trying to look for a solution. It is not normal that we cannot work anymore with those programs They are very expensive (photoshop in the first place) and now they pusch you to buy this software were you have to pay every month a amount.
This is not serious

Ask Adobe and Microsoft if they are not "serious" about abandoning their support of their software. This is not an Apple issue. Your problem needs to be resolved between you and the app developers. If they choose not to support their old apps there is nothing you can do except to upgrade your apps or revert your OS to an older version.

My choice would be to upgrade my third party apps.

You are running Adobe and Microsoft 32-bit abandonware. Both were end-of-lifed by their vendor years ago. Your options now are:

  1. Adobe
    1. See if the single-purchase of Photoshop Elements 2020 can replace your Photoshop CS6e requirements
    2. Enter the Adobe subscription program to stay current with Photoshop 2020 on Catalina
    3. Determine if there are less expensive, non-subscription, non-Java 6 software alternatives to Photoshop CS6e, or current Adobe
      1. Affinity Designer and Affinity Photo in the Mac App Store (64-bit)
      2. Pixelmator and Pixelmator Pro in the Mac App Store (64-bit)
      3. Other 64-bit application(s)
  2. Microsoft
    1. Upgrade to Office 365 subscription (64-bit)
    2. Upgrade to Office 2019 for Mac, (64-bit) single-purchase, non-subscription
    3. Microsoft Office Suite clones
      1. Free, frequently updated LibreOffice v6+ (64-bit)
      2. Other.
  3. Neither
    1. Using your Time Machine backup that you made just prior to the Catalina upgrade, boot into Recovery and Restore from Time Machine backup — wiping the Catalina drive and restoring everything as it was before the upgrade.
    2. Issues will remain with Adobe CS6e and MS Office 2011 on Mojave as neither were designed for, or tested on later Mac operating systems. Mojave was the last to support compatible 32/64-bit applications.
