Hi, I’m trying to order AirPods Pro, but if I add engraving it says I can pick it up on Nov 12. But if I do not add engraving it says I can’t pick it up at an Apple Store. Can anybody explain this to me? And also I’m just visiting USA and going home Nov 12. So If I add engraving will I be able to pick my AirPods up before 12pm on Nov 12?
Engraving is not done at the store.
If you want them engraved, they have to be engraved and shipped from the location where that happens.
This adds time to the delivery date.
Note that now that they have been released, pickup is now available from most Apple Stores.
Yeah, I’m aware. But I was thinking if I do not get it engraved can I then pick up my AirPods at the Apple Store maybe Nov 8 instead of Nov 12. But it just says now that Apple Store Pickup is unavailable unless I get it engraved.

Apple does not know how many they will be able to deliver to stores, so they cannot guarantee a date when you will be able to pick a pair up in-store. (If you do not have them engraved, normally you would just pick up a pair from the store's stock.)
If you order for delivery or have a pair engraved, you are reserving a specific pair that Apple can then direct to you.
