wondering what the best apps Or ways are for keeping an eye on what my children do on their phones? Deleting msgs and private browsing how Can I keep track of these things. Thank so much.

Use parental controls on your child's iPhone, iPad, and iPod touch - Apple Support
As far as your specific questions you can restrict them from being able to use private browsing and from being able to delete their internet history. However, I don't know a way of being able to restrict them from deleting messages.
