Welcome to Apple Support Communities. I understand that apps arent working as expected on your iPhone 11 Pro. You are having to login and log out of apps and lost the login to many apps. I’m happy to help.

After you iPhone has fully restarted, are you able to use apps as expected?
Please check for app updates in the App Store using the steps here: Update apps or use automatic downloads - Apple Support
Once you having updated your apps, are you able to use the apps as expected? Are you using a different Apple ID for some of your apps? If so, you will be prompted to sign in to that Apple ID to update apps using that Apple ID when app updates are available.
