Stuck on update requested

If that doesn't resolve the issue, you can also try updating using iTunes: Update your iPhone, iPad, or iPod touch

This problem most often occurs when you accept an update invitation after Apple has released an even newer update. Apple's update servers, rather than telling you of this situation, simply puke.

Cancel your pending update and "Check for Updates" anew. That should get you back in business.
