Apple pay has records of transactions but, not as far as I know, receipts. Think of it like your credit or debit card. There's a record of your purchases on your bill but no copy of the actual merchant receipt. You need to save the one you get from the merchant or ask them for another copy.

Probably digital ones but getting access to them is a different story.
