Can I store all of my logic projects on an external hard drive? If so, is it as simple as just dragging and dropping all my project files from my internal drive onto my new external drive? Are there any risks when doing this? Such as losing sound effects, plug ins, audio files, etc.? Would doing this slow down the program at all?

If you keep your projects saved in the "package" file, the one with just one icon, moving the project icon on the external drive will do the job. I tell you more: I do work with my laptop having ALL the projects on external hard drive, and I do ALSO RECORD on it (usb 3).
If you work with all the separated files format (not the package file single icon but audio files folder, etc.) you will need to move all of them in order to have the same result.

Yes, you can store them on external drive.
Very minimal risk.
Get the fastest drive you can afford (preferably Thunderbolt).
It is as simple as that, thats what I do, then also copy to a further 2nd drive as a back up.
