Double-Tap will not work in the new Airpods Pro. It is replaced by the new Force-sensor where you have to:
Single press - Play / Pause music. or Answer / End calls.
Double press - skips to Next track
Triple press - skips to previous track
Long press - you can set Noise control / Siri
