I've just updated my mothers iPad Air 2 to iOS 13.2.2, and it's stuck in dark mode; when I go to settings, it won't let me choose light appearance
I'm going through settings > display & brightness > appearance
I've tried turning it on & off, but this hasn't made any difference

Try turning off "Automatic." Settings>Display & Brightness>Automatic (Off).
I've fixed this: I found that I had to enable "Night Shift"; once this had been enabled, I could then choose the original "light" appearance. Strange as this isn't connected to the appearance mode
