Iphone 5s and Apple Watch question

I'm looking to get my girlfriend an Apple Watch for her birthday, but she has a very old phone.. an iPhone 5s. Does the apple watch series 3 GPS Only work with the iPhone 5s?

The currently shipping Series 3 and Series 5 Apple Watches now come with watchOS 6 which requires iOS 13, which needs an iPhone 6s, SE, 7, 8, X, XS, XR, 11 or 11 Pro.

It was the older Apple Watch models where the GPS only models would pair with the iPhone 5s.

I thought I read somewhere that the 5s works for GPS only and the 6s was Cell & GPS, was that incorrect?
