Please can someone let me know how to upgrade previously purchased films to 4K HDR on Apple TV 4K?

Also just be aware that only movies purchased directly from Apple/iTunes will upgrade. If you purchase a movie through Movies Anywhere or another service that is synced to Movies those will not be upgraded.

It isn't something one can do manually. Films will automatically be upgraded to 4K/HDR as they become available.
