Is it possible to use an App Store gift card for Apple TV+, like you can also use it for Apple music?

Yes. iTunes, iBooks, and App Store gift cards can be redeemed onto your Apple ID, and used to pay for Apple's subscriptions including Apple TV+.
Apple Store Gift cards (which are different to iTunes, iBooks and App store gift cards) cannot be used however.
