Restore?
- Restore from backup?:--> Restore your iPhone, iPad, or iPod touch from a backup
- Restore to factory settings?:--> Restore your iPhone, Pad, or iPod to factory settings – Apple Support
note that the #2 option installs a fres copy of the most recent iOS version (so the update is already done).
