All my email folders appear empty. The list of mailboxes (I have 8 email accounts configured) shows the number of unread emails per folder, but all folders and subfolders are empty...

Thank you for using Apple Support Communities! I understand that mailbox folders for multiple email accounts on your iPhone are all appearing empty in the Mail app. It's important that you're able to view and manage your emails when you need to. You've come to the right place for a resolution.
On your computer, sign in to your email provider’s website. Make sure that all of your email is there or make sure that your email is saved somewhere other than your iOS device.
I would like to have you follow the steps in the order listed in the following support article, testing if the folders still appear empty after each step:
If an app unexpectedly quits, stops responding, or won’t open - Apple Support
If you reach the point where you've offloaded and reinstalled the Mail app under step 4 and there's still no change, try to delete and reinstall the Mail app next:
Delete built-in Apple apps on your iOS 12, iOS 13, or iPadOS device or Apple Watch - Apple Support
