Overlapping text boxes in pages

I figured out how to overlap text boxes in pages. First you select both boxes. (command click on both) Now from the format menu off to the right of the screen

Select arrange

from the drop down menu text wrap. Choose none.

How to format/change three part header in Pages (as set by default)? When you open up a new Pages document and hover into the header area, it is broken into three parts. I understand that if you type longer in the first box, it goes across the line, but what if you want to centre the text? It will not allow the centre tool? What exactly is this three part box, it looks like a table, but it doesn't behave like one, and you can't seem to remove it or 'merge cells?' Any ideas?

Pages default object arrangement I really find the default "Automatic" text wrap setting completely annoying when working with objects. With every import of text or objects, I have to go into the Format/Arrange/Text Wrap setting to change "Automatic" to "None." Why is Automatic the default? Is there any way to change the default setting for those of us working with several objects?
