Press and hold an icon in the LaunchPAd and they start shaking—you can only remove the icons with a X present. Not all of them are in the control of the user.
That is the correct procedure to uninstall Mac App Store apps.

Thx — I see the reference now, in relation to AppStore apps

To uninstall apps you purchased from the App Store, use Launchpad.

That is the correct procedure to uninstall Mac App Store apps. But the OP doesn’t want to do that.

There are some low-level Terminal hacks to change the number of rows and columns in LaunchPad which, as a side effect, changes the size of icons. If you want to try that, I can give you a link. I normally don’t recommend those Terminal hacks. They don’t always work and can cause unexpected problems.

You can’t remove icons. What you can do instead is create one or more groups of unwanted icons. Put the icons you don’t want in a group and move them off to the last page where you won’t see them.
