Yes, you can manually pair AirPods Pro with iPod touch (6th generation). You will not benefit from all of AirPods Pro’s new features on unsupported devices.

With both AirPods in the AirPods case, open the lid and press and hold the button on the rear of the case. Hold this button until you see the indicator light turn white then start to blink. You can then select AirPods Pro in Settings > Bluetooth.
