my brand new series 3 Apple Watch won’t pair with my iPhone 6s when I try to pair it it’s saying the watch needs to update but can’t because it’s not connected to the internet but my phone is connected to my WiFi

This may be your issue, is it?
Apple Watch does not support 5GHz WiFi.
Connect your iPhone to a 2.4GHz network in the WiFi settings.
You would need to verify on your router what the wifi is
Most modern wifi's have 2 or more connections , 2.4 GZ, 5GZ, etc
Your phone needs to connected to the 2.4GZ connection.

Tried this and still no joy
Make sure that your phone is updated to ios13 or higher,if it's a brand new watch3 then it should have watchos6 on it which is why the phone has to be on ios13 or higher.
It’s on iOS 13.2.2
