i cannot pair my new Apple Watch with iPhone

Catch 22 situation:

iPhone is up to date, but I cannot pair it with my new Apple Watch...

receiving a massage saying that I need to update my Apple Watch. But, I cannot do this, as long as I cannot pair it with iPhone.

I have tried to pair the same Apple Watch to 3 different iPhones, and got the same message.

What am I doing wrong / missing out on?

Reset your Watch by pressing in the crown and side button until you see the apple logo, then release both.
