Here is the important section of the US one year standard warranty:

Apple may restrict warranty service for iPhone, iPad, Apple TV and HomePod to the country where Apple or its Authorized Distributors originally sold the device.

And, you are corresponding with other end users who cannot do more than post links to Apple's legal warranty terms since we cannot speak for Apple.

Because of warranty restrictions as well as different network regulations in different countries, it would be best to consider sending her an Apple store gift card so she can buy it in the UK.

And where are you sending this device from? While most iOS device warranties are restricted to the country of purchase, iPads tend to be different. However, those are the wi-fi models. Since you are speaking about the cellular version, you would need to check to see what the version number that is sold in the UK.

I would consider sending her the money with a card just because it would take away all of the hassle and would make it easier on your part.

Apple Store gift card is country specific.

A U.S. Apple Store gift card cannot be redeemed in U.K.
