I am visiting the apple store on the 5th Avenue on Saturday 12 December at approximately 9:20 am to trade in an iPhone X 256gb and an iPhone 8 64 gb both in perfect condition for 2 iPhone XR’s 64gb.What I’d like to ask is which is the value of the 2 iPhones we want to trade-in, how much time would it take to complete the trade-in and buy the new phones and if it is possible to trade 1 iPhone 6s as well (for the 2 IPhone XR’s) and buy the new phones.

But, if I were in you shoes, I would contact the Apple Shop explaining your needs and making an appointment, so that you're sure they have your desired XRs available (and you do not waste your time).

They are correct, they do not take appointments for purchases. How long it will take will depend on how busy they are that day. They will need time to inspect the iPhones you are trading in (they can do the first to directly towards the phone, the 6s they will provide a store gift card you can use). Again, depending on how busy they are it will take about 10 minutes to assess each trade in phone and issue the gift card, another 5 to 10 minutes to bring out your iPhones, and maybe 5 minutes to ring you up. So 25 minutes for the interaction with you and whatever time it takes for you to get a salesperson. Your wait time will vary by the time of day you go to the store.
I think they can accept the 6s too (you can ask them while making the appointment).
And no, you don't have to pay anything to make an appointment.
