Wireless game controllers
I just read you can use a wireless game controller with your iPad Pro for many Apple Arcade games. Will it work with games that aren’t part of Apple Arcade?

I don’t think it will work with games that aren’t part of Apple Arcade, pls refer to this link: https://support.apple.com/en-sg/HT210414
In the above link, it mentioned: Connect your wireless controller to play supported games from Apple Arcade or the App Store, navigate your Apple TV, and more.
Anyway, I believe the games from Apple Arcade or the App Store are more than enough for you to play. Have fun.
