How do I totally remove the MDM profile from my Iphone 8

If it's only a profile go to Settings/General/Device Management (may also be called Profiles), open it and delete the profile.
Device Management/Profiles is near the bottom of the list in Settings/General, just below VPN.
However, if the device is under enterprise management see Tim's response.
No, they can’t see everything on your phone. They can see only stuff that is theirs, like company email, calendars and contacts. And if they canceled your email account it would have removed that content. But they can lock and erase your phone.
They can also track the location in real time. They can see what apps are installed. And they can forcibly install apps.
Not to mention re-set the passcode, change passcode requirements, restrict the ability to sync data such as photos, forcibly erase the device... There's quite a bit they can do.
But you're correct, they can't see any 'data' on the phone other than what's in the corporate email, calendar and contacts.

No. There is no way for you to remove it from their management system. Only they can do that.
As Lawrence points out, even jailbreaking won't remove it. That will only notify them that the device has been jailbroken and if they have the policies set correctly on their system, will result in completely bricking the device.
You contact the IT department at the company that set it up on their management system and have them do so.
Yea, I no longer work there, but they they let me keep the phone, I assume they can see everything yet on my phone now.
Then go back to them and ask them to remove it from their management system.
