I have noticed a large amount of complaints about the iPhones complexity and how iPhones are not user friendly. While I believe the majority of iPhone users are familiar and comfortable with navigating and using the iPhones, I believe Apple customers would also appreciate a "simple mode" option.
target demographics being your younger and older customers as well as those whom are new to apple devices.

Probably both. And as an older person I resent the stereotyping. As for young people they pick up using iDevices very easily when they are very young.
There is a simple mode available, they are called flip phones.
You are not talking to Apple.
If you want to see 'complicated', pick up an Android phone some time.
