How can I disable email access on my child’s phone? I don’t want them to be able to access emails at all on their device.

Go to Settings > Screen Time > Content & Privacy Restrictions > Allowed Apps and turn off Mail. Also, make sure that you do not allow any email apps to be downloaded such as Gmail or Outlook. Lastly, if you don't want them to be able to go to gmail.com or outlook.com or something similar then you'll also want to turn off Safari in Allowed Apps and not allow them to download any other browsers like Chrome or Firefox.
