Do Not Disturb bypass
I just got a new Ring camera and was wondering if there’s a way I can bypass Ring’s notifications with my Do Not Disturb settings? Meaning that I want to be notified of the camera in the middle of the night

You might be able to do that if the Ring notifications always come from the same short text number. If they do, set that up as a contact, and then in the Contact, set up the Emergency Bypass from the Text tone section. https://www.imore.com/how-receive-messages-specific-contacts-do-not-disturb-mode
If they are from an app, then there is no way to bypass that. I don't believe the app developers have any access to that API to bypass DND. You could contact Ring and ask them to be sure.
You have not provided any information on the devices you have its version etc.
I’m on an iPhone 11Pro Max running iOS 13.2.3. The camera is a Ring Stick Up Cam with the solar attachment; both The firmware and app are on current versions
The notifications don’t come from a number, they are app notifications. Sorry I didn’t clarify
