If the Apple Watch is for you, your parents would be advised against pairing an Apple Watch for you with their iPhone (assuming they were to get a newer iPhone). The paired Apple Watch will get your parents phone calls, it will get your parents text messages (or from your perspective, they will get Your text messages), you will have access to their email, their contacts, etc...
The Apple Watch is an iPhone accessory, so it requires its own iPhone.
