Hi All, I just bought a series 5 watch. I realise NZ don’t have Cellular right now but when this technology
comes in which I understand Spark are bringing in soon will my watch be capable
of this or not? Thanks

If the model you have is supported by Spark when they provide support, then it should work.
Unless you purchased the Apple Watch Series 5 from North America (US, Canada, Mexico, Puerto Rico), then it should work. That is to say the Series 5 has 2 cellular radio chip sets. The North American and the rest of the world.

No. You would need to purchase an Apple Watch that has the Cellular feature built in.
A Cellular model has a Red dot or Red ring on the Digital Crown.
Im in NZ and bought from NZ but I just looked on the box and it only says GPS, not GPS + cellular
Dam, I thought i was buying one that had the function. Of course they dont tell you in store. I bought the most expensive one thinking it had that function. Im in NZ so I guess they are not for sale here yet
